Fermented Italian Black Lemon
Lemon processed using black garlic techniques. It starts with a raw material of the highest quality, Italian lemon, with edible peel and untreated.
The result is a lemon with a soft texture that is easy to work with. Its taste is a concentrate of flavor that must be measured out to best enhance its citrus, smoky, and spicy characteristics and the pleasant citrus note that envelops the palate.
Chef's Advice
It can be blended to make sauces or enrich creams, cut into thin slices and added to carpaccio and raw seafood, and is also perfect on grilled meats. In more creative versions, it can be used to flavor desserts when combined with chocolate, and is excellent in sorbets and ice creams. It can even be dried to make a powder when needed.
Try it to flavor a chocolate ganache by adding the black lemon, previously crushed, directly into the mixture. You will obtain a delicious ganache pleasantly flavored with the acidic and oriental notes typical of our black lemon, a real treat!
