Buffalo Braid is an Italian excellence known throughout the world: an icon of Made in Italy that is celebrated in the United States as much as Champagne.
Mozzarella is the Queen of "pasta filata cheeses," a unique characteristic of Italian dairy art. Many foreign producers, particularly French, have tried to replicate this production technique, planting buffaloes in their territories, however without ever achieving good results. It is characterized by the different processing technique: while Mozzarella is "mozzata" (closed by hand in the classic round shape), Buffalo Braid is processed by hand, weaving the pasta filata one by one.
