Duck Foie Gras au Torchon
Authentic foie gras cooked in a cloth. Prepared the old-fashioned way by hand and cooked in its cloth in the Georges Bruck artisan factory. This process, combined with slow, gentle cooking, preserves all the delicate flavor and aromas of duck foie gras, enhanced by a blend of more than 12 herbs and spices.
Chef's Advice
Remove from the refrigerator 5 to 10 minutes before serving. Open the vacuum bag and remove the tissue. Dip a knife in very hot water before cutting each slice of foie gras. Serve directly on a plate and enjoy with a good loaf of lightly toasted rustic bread.
What makes Georges Bruck foie gras special?
The raw livers come from goose or duck from small farms, raised in the traditional way in the open air with 100% natural feed (corn, grain, water), guaranteed GMO-free. This choice of small farms guarantees an intensely flavored foie gras that respects animal welfare.
Goose foie compared to duck foie is larger and with a firmer texture, a beautiful pinkish color when raw but turning grayish when cooked. The flavor is mild and lingers in the mouth. On the other hand, duck foie gras is more tender, a magnificent beige-orange color, and a more rustic and pronounced flavor that is immediately noticeable on tasting.
