Bra Duro PDO Cheese
The city of Bra was once the market where this cheese, produced in the mountains of the Cuneo area in northern Italy, was marketed: today it is produced throughout the province. Bra in its two versions obtained DOC status in 1982. It is sometimes referred to as "mezzano" the Bra Duro aged for the minimum period, which can be lengthened to a year or more with excellent results. The additions of sheep's and goat's milk are small compared to the amount of cow's milk, but they manage to give the cheese a strong organoleptic imprint.
