This Canestrato Lucano is a cheese produced in the Basilicata region, in the mountain valleys of the Agri River, in southern Italy. Canestrato Lucano (or Incanestrato, because the wheels are made to dry in baskets which is "canestro" in Italian) has the unique characteristic of being produced by adding a small amount of goat's milk to sheep's milk, which gives it a special flavor.
