Mariscos Calafate S.L. was created at the end of December 2017 in Adra (Almería), in southeast Spain, by Nicolás Casas González’s grandchildren (nicknamed “El Calafate” meaning “master carpenter”). This is therefore the third generation of a family business of shipowners and fishermen, specialized in the fishing of ultra-frozen seafood and its subsequent distribution. The traditional fishing is carried out on 4 boats on which the crew – with meticulous care – selects and obtains crustaceans of the highest quality. The raw material is respected to the maximum, minimizing the time from capture to freezing of the molluscs, process that is carried out on the same boat at temperatures of -45 °C, after which the products are kept at -20 °C.

In Spain, there is no question that the best way to eat this famous crustacean is either raw or seared on the grill and seasoned only with oil and salt. However, nowadays, the fame of this crustacean typical of southern Spain has reached the international stage and chefs from all over the world have recognized its incredible culinary properties. Qualities that can be exalted with minimally invasive cooking techniques, in order to fully appreciate the soavità of this meat.

A succulent crustacean, delicate and full of flavor in the head, a product of the sea that has become famous for its length: in fact, it can reach up to 30 cm. The name may create some ambiguity with the name of the Spanish 19th century armed forces or “Carabineros”: a connection that actually exists. The etymology appears to be linked to the boats of Massimiliano d'Asburgo’s carabineros, known for the bright red color of their uniforms, similar to the characteristic chromatism of these superb crustaceans.

The Atlantic Red Prawn is a very popular and widely used crustacean in Andalusia: from a nutritional point of view, the caloric intake is quite low, not even 100 calories per 100 g of product, with a low fat content and a good amount of protein. It also contains minerals, particularly iron, phosphorus, calcium, B vitamins and Omega-3 fatty acids. The carapace is robust, leathery and spiky, it has 5 appendages and the large tail opens up like a fan. Obviously, the most distinctive feature is the bright red and shiny color, a symptom of quality and freshness!

The company

With a story that began in 1945, the Mariscos Calafate company takes its name from the nickname of the founder of the family-run business, Nicolás Casas González, “El Calafate” or the master carpenter, who worked on ships.

In 1945 he created the first shipyard in the city of Adra (Almería), in southern Spain and specialized in the construction of wooden fishing boats. Together with his son, Nicolás Casas Biedma, in the mid-1990s the shipyard became one of the most important in Spain and internationally.
