Lomo is, without doubt, one of the most famous sausages of the Spanish pork-butchery. It is made from the pork fillet, seasoned with salt, paprika and other spices, cased in a natural casing and aged for three or four months in special drying rooms.
The outside is typically light red, while the interior is bright red and characterized by the typical marbling attributed to the acorn fat. Blázquez is the first producer in the Salamanca area, in northwestern Spain, where the Guijuelo Denomination of Origin is in place, the first historically to be established for Iberian ham in Spain: the ham produced in this region is characterized by a delicate, fruity and sweet flavor.
The delicacy and sweetness of the meat is attributed by the male Duroc pig (crossed with 100% Iberian female pigs) which, being larger, is characterized by a more significant fat infiltration. On the other hand, the 100% Iberian female pig is genetically predisposed to assimilate oleic acid obtained from “bellotas”, the small acorns that the pigs love to devour. A perfect union for a delicate, suave and exquisite jamón! When the so-called “montanera” period begins (the last stage of the breeding of Iberian pigs), Blázquez releases a selection of its best Iberian pigs so that they can feed and fatten in the most natural environment possible, living in the wild on more than 30,000 hectares reserved for grazing.
When they are released into the wild, the pigs weigh around 90 kg: by the end of the “montanera” period, between January and March, they will reach over 180 kg!
Incredibly, the pigs will gain nearly 1 kg a day by eating 10 kg of acorns every 24 hours. But in order for the pigs to reach their ideal weight, relying exclusively on an acorn-based diet, their density must be very scarce: one pig per every two hectares of land. Great wide open spaces, very few pigs free to graze in packs, acorns rich in oleic acid, which will give their meat a unique flavor for one of the most extraordinary taste experiences ever.
The Blázquez family founded their ham company in 1932, in the province of Salamanca in northwestern Spain, based on the unique artisanal know-how of that time. Today, Blázquez continues to be a family-run company with almost 90 years of tradition in producing one of the most iconic Iberian excellencies: the Jamón Iberico De Bellota, commonly known as “Pata Negra”. Controlled genetics, a strict selection criteria based on unique know-how diligently passed down from generation to generation and self-produced nutrition: the secrets still carefully guarded by the third generation of the family. From the year of its foundation to today, Jamones Blázquez continues to remain perfectly faithful to its natural and traditional production processes.
