Mozzarella di Bufala is an Italian excellence known all over the world: an icon of Made in Italy that in the United States is celebrated as much as Champagne.
Mozzarella is the queen of "pasta filata cheeses", a unique characteristic of the Italian dairy art. Many foreign producers, in particular French ones, have tried to replicate this production technique by planting buffaloes in their territories, however without ever achieving good results. It is characterized by the different processing technique: whereas Mozzarella is "mozzata" (closed by hand in the classic round shape), Treccia is processed by hand, weaving one by one the pasta filata.

The organoleptic and commercial characteristics of Treccia di Bufala, derive from precise environmental conditions and traditional processing methods existing only in Campania. Only dairies that pass the demanding certification process can obtain the DOP mark.
Caseificio Barlotti, born at the beginning of 1900, is one of the oldest production realities of Piana del Sele in Paestum. In this area the fertile lands and the mild climate have created a natural habitat for the grazing of buffaloes, from whose precious milk are produced not only Mozzarella but also other specialties, all rigorously produced with buffalo milk from Campania.
