Mozzarella di Bufala is an Italian excellence known all over the world: an icon of Made in Italy that in the United States is celebrated as much as Champagne.
Mozzarella is the queen of "pasta filata cheeses", a unique characteristic of the Italian dairy art. Many foreign producers, in particular French ones, have tried to replicate this production technique by planting buffaloes in their territories, without ever achieving good results.

In order to be a Mozzarella di Bufala Campana DOP, fresh whole buffalo milk must come exclusively from the farms of the certified area. With the Denomination are recognized those organoleptic and commercial characteristics of the typical Mozzarella di Bufala Campana cheese, derived from precise environmental conditions and traditional processing methods existing only in this specific production area. Only dairies which pass the demanding certification process can obtain the DOP mark. Subsequently, these companies are constantly monitored through analyses in order to guarantee the respect of the regulations and the high quality standards of the product put on the market.
Caseificio Barlotti, born at the beginning of 1900, is one of the most ancient production realities of Piana del Sele of Paestum. In this area the fertile lands and the mild climate have created a natural habitat for the grazing of buffaloes, from whose precious milk are produced not only Mozzarella but also other specialties, all rigorously produced with buffalo milk from Campania.
