Desmigados desired cod (frayed)
Baccalà strips from Giraldo’s Esencial line are small tips obtained from less noble codfish cuts. They are often used for the preparation of fillings for fresh pasta or for creamed cod dishes.
Giraldo purchases cod fished exclusively by hook and longline in the cold waters off the coast of Iceland and the Faroe Islands, partnering only with selected and now historic small fishing boat.
The company’s trademark is their unique desalting and draining process, which has consolidated Giraldo’s presence around the world. From 1973 to today, Giraldo has had one main goal: to elevate a poor dish typical of the Basque tradition into a gourmet product, considered the Baccalà dei Maestri.

As the product consists of small ingot-like pieces, cooking will be very quick. Alternatively, they can be used for salads, carpaccio and tartare.
Production method: Fished in the North East Atlantic Ocean and in the Iceland and the Faroe Islands seabed.

Storage method: Store between 0 and 5 °C
Using the product: once opened, consume the product within 48 hours
