Italian Black Shallot Cream
The range of the young Italian company, Umami, also offers a new and innovative product: black shallot cream, processed relying on the same thermal maturation techniques used for producing the more famous fermented Black Garlic. Offered in 180 g glass jars, the cream is made from whole Italian shallots, expertly fermented thanks to the skills of two young and resourceful biologists from Piedmont. Only Italian shallots are used, closely controlled throughout the supply chain and which present very different characteristics compared to black garlic: while they share balsamic notes, the shallot differs in an aftertaste of coffee and a much more melt-in-the-mouth texture.
After the long fermentation process the shallots turn black, acquire new fragrances and flavors and will be able to enhance every culinary creation, from savory to sweet. Next, it is processed into a delicious cream with the addition of olive oil, ideal to spread on a piece of fresh bread or to flavor risottos and sauces. Only certified and top quality raw materials, for an Italian superfood!
