The young Italian company Umami's offering also features Cream of Black Shallot, processed using the same heat-ripening techniques used to produce the more famous Black Garlic. The cream comes from whole Italian shallot bulbs.
Chef's Advice
Shallots differ from black garlic because they have a coffee aftertaste and a much more delicate texture. After the maturation process it turns black, acquiring new fragrances and will be able to enhance any creation, from savory to sweet. It is made into a delicious cream by adding olive oil and water, ideal for spreading or for flavoring risottos and sauces.
How is Umami's black shallot produced?
UMAMI Italian black shallots are produced through a thermal ripening process, without the addition of preservatives or chemical additives. The process is completely natural and takes place in a temperature and humidity controlled environment for about 1 month at temperatures between 50°C and 80°C. This production technique greatly enhances the natural properties of the shallot, changing its color, flavor and texture. In addition, the aging process makes it extremely digestible compared to fresh shallots.
