Karaburun caviar is derived from the same species as Asetra caviar, Acipenser gueldenstaedtii. Egg size ranges from 2.9 to 3.2 mm in diameter. It is a selection of lighter-colored eggs: their luster combined with the unexpected shade make this caviar resemble a golden casket.
Chef's Advice
Caviar should be enjoyed cold using a mother-of-pearl spoon. Avoid metal cutlery so as not to alter the flavor.
What makes Longino's caviar special?
Fundamental to quality caviar is the method of feeding the sturgeon: drop-feeding ensures that the sturgeon are always fed fresh feed. In order to prevent fish from feeding on the muddy deposits at the bottom of the river, nets are installed to prevent them from going deep.
