Slowcooked codfish salad

The will to cook, during hot weather, is less and less. That's why Chef Giorgio Guglielmetti and the sous chef Rodrigo came up with a recipe ready in just 5 minutes! In this cod salad you will appreciate the technique of water cooking, similar to oil cooking. Water cooking involves cooking the fish in water at a temperature of 60° for a few minutes. In this way, the cod will retain its delicacy and firmness of flesh, without being tough and fibrous to chew (which happens when it is boiled).

Ingredients for 4 people

  • Codfish fillets 600 g
  • Wild Salad 50 g
  • Dried Fuit
  • EVO Oil
  • Maldon Salt
  • Bonini Gustoso Vinegar

Method

  • Bring water to 60°, add codfish and cook for 5 minutes

  • Dress the salad with evo oil, salt, pepper and balsamic vinegar

  • Slice the codfish

  • Coarsely chop the dried fruit

  • Plate
