Morros of cod
“Morros” are the initial part of the salted cod fillet and come in slices weighing about 120 g each with the skin left on, therefore ideal for single portions.
Giraldo cod is fished exclusively by hook and longline in the cold waters off the coast of Iceland and the Faroe Islands. As soon as it is caught, the codfish undergoes a first salting on board the fishing vessels while it is still whole. The boats return to port within a maximum of 12 hours, preventing the cod from deteriorating.
“Morros” are the initial part of the cod fillet and therefore much narrower than the “lomo” or the center cut. The pieces are soaked for about 6 days (as opposed to the thicker “lomo” cut which is soaked for 10 days). Before proceeding with soaking the fish, Giraldo selects the cuts based on their thickness and size, ensuring that each product is always desalted in the same way: the result is a slightly savory product, with a full and fresh cod taste. This is a very important characteristic that distinguishes Giraldo codfish from other companies that desalt cod in full pieces and are thus unable to achieve homogeneity of flavor for all the different parts of the fish.
