Mountain Eggs
A Leghorn breed from a small farm in South Tyrol, the Uova di Montagna hen is a “real” hen with intact beaks (fundamental for the digestion and assimilation of the feed) and wings, so that it is truly free to rummage around and live a natural life.
Set in a mountainous habitat, immersed in centuries-old chestnut groves, the free-range farm consists of wooden coops divided in groups of less than 140 birds, allowing them to develop their social hierarchy and live stress-free. Uova di Montagna’s hen lay a seasonal egg.
During spring and summer, when the meadows are full of flowers and insects and there is an abundance of earthworms and snails on the pasture, the hen is able to obtain maximum nutrition: the result is an egg characterized by a better protein structure.
The grassy areas – a genuine banquet for hens – are respected, guaranteeing each hen at least 7 square meters of pasture, cleaning sand and good old-fashioned chicken fun. During the winter period, on the other hand, the snow and cold freeze the soil together with the multitude of organisms present on the pasture, thus preventing the hens from constantly rummaging.
Thanks to significant investments in research and development, the Uova di Montagna farm was able to create sensible forms of food supplementation for its mountain hens: a specially created ad hoc GMO-free recipe composed of Garda olives, corn, brewer's yeast, calcium carbonate, whole toasted soybean seeds, wheat and wheat bran. In addition, thanks to the collaboration with nearby producers, the farm provides the hens with a fattening supplement consisting of turnips rich in proteins, fibers, magnesium, calcium and sugars, which the hens are no longer able to obtain with the snow-covered ground. Another important food supplement is earthworms, which the hens can enjoy in the special earthworm breeding boxes found throughout the farm, designed to ensure a constant protein intake throughout the year.
The Leghorn hen is characterized by a white egg and for being a rustic bird with very large wings that allow the chickens to jump and flap up covering quite a bit of ground. Uova di Montagna pampers its hens, allowing them to enjoy up to 4 years of life (compared to the food industry where the chickens typically only reach 12 months), stimulating their wild character throughout their life, with “gyms” that allow the hens to keep fit and have fun.
How do you recognize a quality egg at first glance?
The shell must be very compact, the egg white solid, rounded and gelatinous (which means that the animal has eaten a lot of proteins), while the yolk must be perfectly round and turgid (symptom of a diet rich in vitamins and carbohydrates).
Essentially, these characteristics translate into an egg very different from those typically available on the market both in terms of taste, organoleptic properties but also simplicity of the preparation: in fact, the true litmus test of an egg of exceptional quality is the ability to make a perfect poached egg without the need to create a vortex in the boiling water.
The company
Mattia and Giovanni founded the Uova di Montagna farm in 2016 with the aim of producing the best possible eggs while guaranteeing the highest standards of well-being for the animal. The breeding method is, in fact, inspired by some of Rudolf Steiner’s teachings and principles who, already in the early 1900s, envisioned an agriculture and a breeding method respectful of the natural cycles and of the ecological balance, threatened both by an animal concentration that is too high, as well as by the extremely specialized breeding typical of the industry.
Free-range breeding respects the ethological characteristics of the chicken and meets its different needs during all seasons and in all weather conditions.
