Parmigiano Reggiano is certainly in the Top 3 of the best known cheeses in the world. Produced exclusively in the provinces of Parma, Reggio Emilia, Modena, Bologna (to the left of the Reno river) and Mantua (to the right of the Po river), it is an icon of our gastronomic culture. The term "Red Cows" refers to the dairy cows of the Reggiana breed, characterized by their reddish coat, which were traditionally used for the production of Parmigiano, precisely because of their milk, of above average quality. However, the high demand for Parmesan and the fast pace of globalization have supplanted this breed for a more productive but less valuable Friesian breed. In recent decades they have come back into vogue and the production of forms, recognizable by the additional (smaller) brand imprinted with the inscription "Red cows - Razza Reggiana", have even higher quality standards than the DOP and therefore the production and availability is very limited to small dairies.

When great-grandfather Luigi Guffanti, in 1876, began maturing Gorgonzola, his brilliant intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese. The rest is simply history! Over time, the Guffanti family has specialized in the selection, maturing and refinement of the best Italian and international dairy products: the experience accumulated on Gorgonzola, which remains the trademark, has been gradually transferred to all other types of cheese.
After 5 generations, the attention to the artisan quality of the dairy product and the passion for careful refinement continue to characterize the Guffanti-Fiori family, consolidated today as one of the best refiners in the world.
