Smoked Buffalo Scamorza
Buffalo Scamorza, unlike Scamorza cheese made from cow’s milk, is characterized by a softer and whiter rind, a moister texture and a stronger flavor, given to it by the buffalo milk. Scamorza is part of the “spun curd” (or “pasta filata”) cheese family, a unique feature of the Italian dairy art. Many foreign producers, particularly French ones, have tried to replicate this production technique, breeding buffaloes in their territories, without ever achieving good results.

Caseificio Barlotti, established in the early 1900s, is one of the oldest dairies in the Piana del Sele area in Paestum, in southern Italy. This area’s fertile soil and mild climate have created a natural grazing habitat for buffaloes, whose precious milk is used to produce not only the classic Mozzarella, but also other specialties, all strictly made with buffalo milk from Campania.
