Whole Blue Shrimp
Mazara del Vallo Blue Shrimp is a crustacean native to the Mediterranean and the Atlantic Ocean.
Very similar to red shrimp, Aristeus Antennatus is characterized by a lighter color with blue and purple hues. The carapace – the outer armor that protects the shrimp – is thinner than in red shrimp, and the rostrum – the upper part above the head of the shrimp – has 3 teeth (as opposed to the 5 found on the red shrimp).
Blue Shrimp is a very rare crustacean that lives in very deep waters at depths up to 1500 meters: highly sought-after in all traditional Mediterranean cuisines – as is the case for red shrimp – it is recommended to serve raw.
Like all Don Gambero products, as soon as they are caught, the seafood is immediately blast chilled directly on board certified fishing vessel laboratories, with a very high thermal shock. In order to maintain the full freshness of the product, the processing is carried out very quickly without rinsing and icing. The shrimp are then packaged in special trays that guarantee the structure, flavor, aroma and nutritional values of the product.
