Caramote prawns (Mazzancolla) are a medium-sized crustacean native to the Mediterranean Sea. The prawns are characterized by a white and firm meat and by the beautiful blue shades on the carapace (the armor that covers the crustaceans). Caramote prawns, also known as “Imperial Prawns”, are delectable crustaceans, highly sought-after by seafood lovers, because of their delicate flavor. A true treasure of the Mediterranean Sea offering many nutritional properties (phosphorus, calcium, iron and vitamins B) and characterized by an unmistakable taste. Caramote prawns are best enjoyed seared over a live flame for just 1 minute per side.
Like all Don Gambero products, as soon as they are caught, the seafood is immediately blast chilled directly on board certified fishing vessel laboratories, with a very high thermal shock. In order to maintain the full freshness of the product, the processing is carried out very quickly without rinsing and icing. The shrimp are then packaged in special trays that guarantee the structure, flavor, aroma and nutritional values of the product.
