Beaufort D'Alpage Cheese
Beaufort d'Alpage is the best part of the summer cheese production that starts in early June and lasts until the end of October, when Tarentaise and Abondance cows graze on the alpine meadows filled with abundant wildflowers and grasses and give a rich aroma to the flavorful milk. It takes 500 liters of milk to make one wheel of Beaufort. It follows traditional time-tested techniques: there are two cookings a day, produced at over 1,500 meters above sea level from the milk of a single herd.
It has a slightly yellow paste with an impeccable buttery texture. Its excellent taste and flavors of fresh milk and white flowers will take you on an imaginary trip to the mountains.
