Longino has selected a special producer who is Barlotti factory. They transform buffalo milk into a delicacy in the form of mozzarella, braids and chunks to please even the most picky eaters. The Barlotti Cheese Factory, established in the early 1900s, is one of the oldest companies in the Sele Plain of Paestum, in Campania. This area is a natural habitat for grazing buffalo, from whose precious milk are produced, not only Mozzarella but also other specialties, all rigorously made with buffalo milk from Campania.

Mozzarella di Bufala from Campania is made only from fresh whole buffalo milk. Mozzarella usually has a round shape, but it can come in other forms. In fact, depending on the type of processing, we can have cheese chunks or braids. The color is white, it has a very thin rind, while the paste is made up of thin leaves that melt. When cut, the mozzarella has a slight white draining, with the scent of milk enzymes. The flavor is delicate and very characteristic, but intense when smoked.

Parmigiano Reggiano: the true essence of Italy
