Italian Violet Asparagus
Violet asparagus is a variety of asparagus characterized by the dark purple color of their tips and upper parts, while the lower part of the stem may be green. Their flavor is similar to that of green asparagus, but with a slight extra sweetness.
Italian violet asparagus comes from different regions of the country. Some of the main production areas are Veneto, Emilia-Romagna, Lazio, Tuscany and Campania. The production of purple asparagus in Italy occurs mainly during spring, when it is possible to find these delicious fresh vegetables in markets and grocery stores.
Violet asparagus is a great addition to salads, risottos, and pastas or can be enjoyed on its own as a flavorful and colorful side dish.
