Formagella di Malga Raw Milk Cheese
Formaggella di Malga is produced in mountain areas around the valleys of Bergamo, in northern Italy, where farmers use pastures for milk production. This area is famous for the variety of cheese production and the delicious cheese boards that they can create.
The cattle are left to graze day and night during the summer in steep meadows and pastures where farm machinery cannot work to make hay, to face the winter in which the cattle will be in the barn for 4-5 months.

Chef's Advice
Its sweet taste is excellent paired with full-bodied red wines, a spoon of chestnut honey, spicy fruit mostarda, but also fresh fruit lightly seasoned (e.g., apples, Passacrassana pear), and spread on rye bread.
