Wild Dover Sole
Dover sole is a right-eyed flatfish, this fish has its mouth on the left side, as do all true members of the sole family.
This fish is particular because it doesn’t have the texture of a normal fish. Its flesh is more like a meat, and it has a delicate, mild, and sweet flavour.
Sole, a delicate and prized fish, can be cooked in many different ways to enhance its delicious flavor. One of the most classic methods is sole fillets in butter and lemon: the fish is lightly floured and then cooked in a pan with butter until golden brown. The final touch is provided by lemon juice, which adds a fresh, slightly tart note.
It is very important never to overcook the fish, it should flake easily. Do never waste the bones, even though they are harder than the bones of many other fish and not as oily, they are ideal to make a quality fish stock.
