Sardinian Fregola, also called fregula, resembles cous cous, but it is a very old variety of Italian pasta made with 3 simple ingredients: durum wheat semolina, water, and salt.

To cook Sardinian fregola in an excellent way, it is important to consider a few aspects. First, fregola absorbs flavors very well, so it is advisable to cook it in a good broth or season it with spices and herbs.
A classic method of preparing fregola is to cook it like a risotto, gradually adding the liquid and stirring frequently. This method allows the fregola to release the starch and become creamy, while maintaining its unique texture.

How is fregola made?
Pastart's Sardinian Fregola with saffron is made by gradually combining the highest quality saffron and water with the semolina, the semolina is then kneaded by hand so as to obtain " shreds" of pasta.
These shreds are then sieved in a special sieve of various sizes to obtain equal size pieces.
