Erborinato Sancarlone Cheese
A version of Blu novarese cheese named after the patron saint of the town of Arona, where Guffanti's aging cellar is located. Sancarlone blue cheese is a cheese made by processing cow's milk from the province of Novara and recalling the great tradition of Piedmontese blues.
Chef's Advice
Pairs excellently with full-bodied, aged red wines, sweet and fortified wines, spicy fruit mustard, red onion jam, rye bread, polenta.

Flavor & Pairings Pronounced yet balanced, with pleasant piquancy; try with pears, figs, toasted walnuts, chestnut honey, bitter greens, or a few drops of aged balsamic.
Serving Remove from the fridge 30–45 minutes before serving and enjoy at 12–16 °C; spread on rustic bread, crumble over risotto or polenta, or melt into a creamy sauce for gnocchi.
Storage Wrap in foil or cheese paper and place inside a lidded container to contain aroma; change wrapping after each use and consume within 7–10 days of opening.
When great-grandfather Luigi Guffanti began aging Gorgonzola in 1876, his genius intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese. Five generations have passed, the attention to the artisanal quality of the cheese product and the passion for careful ripening continue to characterize the Guffanti-Fiori family, consolidated to this day as one of the best ripeners in the world.
