Baikal Caviar | 10g
Not sure how to use caviar in your dishes?
In this video recipe we show you how to cook caviar, potato mousse and soft boiled egg, to make the most of this Rare and Precious product.
Baikal caviar comes from the Baeri, a medium-sized sturgeon that reaches adulthood between its fifth and sixth year of life, at which time the female begins to lay eggs.
Baikal is a small caviar with a diameter between 2.5-2.7 mm and is dark in color, tending almost to black and a very delicate grain.
Caviar should be enjoyed cold using a mother-of-pearl spoon. Avoid metal cutlery to avoid altering the flavor.
Caviar is best appreciated on its own, given its value and fine aroma; however, Baikal is perfect paired with cold or slightly lukewarm dishes such as cold spaghetti, caviar and chives.
Fundamental to quality caviar is the method of feeding the sturgeon: drop-feeding ensures that the sturgeon are always fed fresh feed. In order to prevent fish from feeding on the muddy deposits at the bottom of the river, nets are installed to prevent them from going deep.
Thanks to the precision and meticulous care of the product, we are able to serve a product of the highest standard for the most discerning palates. Freshly packaged caviar is immediately vacuum packed which ensures that the product maintains its freshness.
Caviar - Sturgeon Eggs Baeri
Longino & Cardenal was founded in 1988 and was the first Italian company to import fresh caviar from Iran: the intuition of importing the raw material and reselling it repackaged proved to be successful. We can boast of having the number 1 as the progressive number of authorized repackaging plants in Italy and all our cans show the code IT0001.
The fictional characters, Longino, a Swiss nobleman, and Cardenal, a Cuban fisherman, concretely represent our philosophy. We started with caviar to discover many other Rare and Precious Foods around the world. For more than 30 years serving the most demanding Italian and international chefs, we select the best caviar available on the market for enthusiasts and gourmands throughout the world.
