Caprini Delle Prealpi Biellesi (Piedmont)
Caprini delle Prealpi Biellesi is a creamy cheese made exclusively from raw milk of the Saanen breed of goat, the largest of the dairy goats, native to Switzerland. Made by artisan cheesemakers in the province of Biella, it undergoes dry salting and matures for at least 30 days. Compared to brine salting (it gives much more flavor but less structure on the palate), dry salting does not cover the sweetness of the milk and gives a better crunchiness in the rind. So it will turn out more compact than a traditional goat's cheese.

How is Caprino delle Prealpi Biellesi produced?
Produced by artisan cheesemakers in the province of Biella, caprino undergoes dry salting and matures for at least 30 days. When great-grandfather Luigi Guffanti began aging Gorgonzola in 1876, his genius intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese.
