Chili pepper flavored butter is ideal with seafood and land products.  Unlike traditional butters, flavored butters are made from pasteurized milk but always in wooden churns, the cylindrical-shaped container where the cream is precisely transformed into butter.  

In fact, butter is basically the product obtained from the cream made from cow's milk: it consists not only of the actual fat but also of a part of the constituents of cream (water, lipids, pigments, proteins, lactose and some salts).The difference between cream and butter consists in the fact that in the former the fat is dispersed in the water, while in butter it is the water that disperses (in the form of droplets) in the fat: it is the process of buttering that induces this transformation.

The company
Owner Pascal Beillevaire began his entrepreneurial adventure in the 1980s with the mission of producing true artisanal butter as per his family tradition. He then started with village markets and regional events, and success was not long in coming. Success and exponential growth have not changed Monsieur Pascal, however; in fact, he is still the only company in France that continues to work with raw milk and churns its butter in wooden churns.
