How is Alicante nougat produced?
According to the specifications for Alicante Nougat, almonds must be at least 46% (this one by Pablo Garrigòs Ibànez goes as high as 68%) and are lightly toasted in rotating drums, called boixets: once the desired toasting point is reached, diluted egg white and rosemary honey are added until a fluid and compact amalgam is created. Then the resulting mass is poured into circular molds and covered with wafers: delicacy and crunchiness for a unique and incomparable product.
