Duck confit is undoubtedly one of the most sought-after products in French gastronomy: a traditional “ready to cook” product of the Landes region, a true “green lung” and a characteristic product of the great agricultural tradition of southern France. The time-honored confit tradition – in this case the duck leg – consists in cooking meat, fish or fruit in fat or in sugary water. A prolonged cooking technique that results in a “jelly” consistency that keeps and preserves the legs for longer.

Simply heat the product in a pan for a few minutes and the confit is ready to serve.

Lafitte collaborates with more than 80 exclusively local breeders, preserving and promoting traditional small farms that respect animal welfare. Lafitte is one of very few foie gras companies able to guarantee full control of their production process, from the selection and breeding of ducks, to the processing and sale of this refined product. Ducks are raised outdoors in a natural and frugal environment. The ducks’ diet is plant-based (no GMOs), consisting of wheat and cereals, but the real difference is made by the whole corn grown in the Landes de Gascogne park, a product local to this region and representing only 5% of total French production.

To guarantee its customers a traditional duck, raised for a minimum of 102 days, Lafitte has been working with its own certification system and very specific requirements for its partners since 2002. As the ducks are traditionally fed, their foie gras and their anatomical cuts are characterized by a rich, rustic flavor and a unique texture. All Lafitte products are made with very few ingredients, taking inspiration from simple family recipes, obviously without any additives and preservatives.

Combining the family’s extensive know-how, the expertise of an experienced local workforce and the permanent investments in its processing plants, in 2015 Lafitte was proud to obtain its IFS certification with flying colors. Tradition and innovation have made Lafitte a pioneer in the production of quality duck foie gras.

The company

Founded in 1920 by Pierre Lafitte, in the typical village of Montaut in Chalosse in the French Landes, the company offers the best Duck Foie Gras produced in the area. Lafitte’s ducks come from an ancient, slow-growing duck variety and are fattened with whole non-GMO corn grains. All Lafitte preserves are crafted using traditional artisanal methods, without the use of additives or preservatives.
