Langoustine are among the most beloved crustaceans because their white, delicate and soft flesh is a perfect match for many types of preparations.
Also known as Norway lobsters, langoustines are pale orange-pink crustaceans, similar to lobsters but a lot smaller. They are different from shrimp because they have two particularly developed front claws.
Chef's Advice
The cooking of langoustines can vary depending on the desired result. Placing the langoustines straight on a hot barbecue (cut in half lengthways, cut-side up) and cooking for a couple of minutes is a summertime winner, giving the shellfish a slightly smoky finish.
If you want to pan-fry the langoustine, you need to extract the plump by peeling it.
