The Blázquez branded jamón carving stand used by Spanish cortadors – true masters of the art of cutting jamón – to serve the famous Iberian ham.
The device has its roots in Spain and, traditionally, it is characterized by a simple sturdy wooden base on which a metal prong and a clamp are fixed. The thinner end of the pork leg is fixed in an elevated position, while the base rests on the wood, kept in place by the metal prong.
Once mounted on the stand, the ham is normally stored in this way at room temperature, often simply covered with a cloth to avoid excessive drying.
