Blu Del Moncenisio is produced on the Moncenisio plateau, the southern slope of the Fréjus Hills and the Novalese Plateau. It is therefore a cheese produced on the border with France, an influence that is also assumed by the name “bleu”, which recalls the “bleu” of the Alps.
Blue of Moncenisio is produced with pasteurized cow's milk obtained precisely from two subsequent milkings, of which the first is partially skimmed by separation.
The mass obtained from the first milking is wrapped in linen sheets and allowed to drain and rest for 3-4 days. At this point, as is the case for all blue cheeses, it is mixed with a second fresh curd, so that the two masses do not come together homogeneously (the first curd, in fact, has a greater acidity than the fresh one). The result is the creation of crevices and cracks in the paste, ready to accommodate the growth of noble molds, characteristic of all blue cheeses.

The Company
