Mullet Roes
Mullet roe, also known as bottarga, is named after the fish from which it is obtained. A 100% natural and artisanal quality product made of salted, cured fish roe. The tongue-shaped pouch of fish eggs is cut from the mullet, hand-salted, and then sun-dried for few months.
Mullet roe has an intense, salty flavor. Its taste is distinctive and unique, with a strong sea flavour. Mullet roe also offers a delicate hint of seafood and a distinctive aroma that makes it a popular ingredient in cooking.
Chef's Advice
It is an extraordinary and much appreciated delicacy, essential in Mediterranean aperitifs. It is eaten cut into very thin strips, sometimes marinated in a few drops of extra virgin olive oil or simply grated to give more flavor to our pasta dishes, pizzas or fish roasts. We recommend grating the roe to obtain a "mullet salt" and adding flavor to your dishes.
