Dairy Borgotaro, located between La Spezia and Parma, in the Val di Taro, was founded in 1967, starting the business, starting with milk, coming only and exclusively from stables located in the surrounding area. Great attention is paid to the feeding of dairy cows: only cows fed with local fodder, produced at an altitude of over 1000 meters, characterized by the richness and variety of forage essences.
The forms of Parmigiano Reggiano are seasoned by exploiting the qualities of natural aeration and spend two summers in seasoning. The milk, which arrives at the dairy within only two hours of milking, comes from the Bruna Alpina, renowned for the production of fine milk with a high casein content.

The cheese evolves in a balance of sweet and savory, it is perfectly soluble, crumbly and grainy.
