A good jam is determined by the quality of the fruit; in fact, only the best varieties are selected. The fruit, sourced from France, is picked at full ripeness when it is much more sugary and contains more fructose, thus avoiding the need to add more sugar than necessary. No dyes or preservatives are added to the fruit, which is cooked in small copper pots. During the short and controlled cooking process, the fruit is gently stirred with a beech wood spatula.
