This pepper crust pecorino, also called Pecorino "canestrato" according to Sicilian tradition, does not have the addition of black peppercorns in the paste, but only the crust coating with crushed black pepper. A different process that allows the cheese to be flavored, while protecting it at the same time, avoiding the "inconvenience," of having to remove the peppercorns at the time of consumption.
Well known as a grating cheese (a fundamental ingredient in all the first courses of traditional Roman cuisine), however, it is also excellent for a cheese board.
