Pecorino Romano is a cheese produced in Sardinia, Lazio and in the province of Grosseto. The processing of this cheese must take place exclusively within these areas, including the lactic ferments and the rennet which must be local. Although the name may lead one to think that it is a cheese typical of Rome, today it is primarily produced in Sardinia, with only a small part of the production taking place in Lazio and Grosseto.
Famous as a grated cheese (a fundamental ingredient for most pasta dishes and risottos typical of Roman cuisine), it is also excellent to enjoy on its own. Guffanti offers it in a spectacular version aged for 24 months, process that takes place in the cellars owned by Arona.

The Company
