Pecorino Romano is a salty and spicy Italian cheese whose production area includes Sardinia, Lazio and the province of Grosseto.
Well known as a grating cheese on top of pasta (a key ingredient in all the first courses of traditional Roman cuisine), Pecorino Romano is also excellent on a cheese board. Our Italian producer Guffanti presents it in a spectacular aging of more than 24 months.
This Italian cheese is one of the oldest in Italian history, its origins date back to Roman times. It is told that Pecorino romano was the favorite food of soldiers during war.

When great-grandfather Luigi Guffanti began aging Gorgonzola in 1876, his genius intuition was the purchase of an abandoned silver mine in Valganna, in the province of Varese.
