Preserved foie gras has a long shelf life, typical of these products which, expertly treated by George Bruck, improve as they age, developing all their flavors and fragrances while “resting” at room temperature.
Recommendations for use
It is recommended to consume foie gras at the beginning of the meal when the palate is still clean in order to fully appreciate its round and complex flavor. A portion of 40/50 g per person is recommended. Any type of foie gras should be refrigerated for a few hours before serving and should be placed on the table 20 minutes before serving.
It is a serious mistake to spread it on a slice of bread with a knife: to appreciate the buttery and refined taste of foie gras, you need a fork and a small piece of toasted bread, preferably a brioche or baguette.

The raw livers come from geese or ducks raised on small farms, bred traditionally in the open air with 100% natural feed (corn, wheat, water), guaranteed GMO-free. This choice of small farms guarantees foie gras with an intense flavor that respects animal welfare.
Goose foie gras is larger than duck foie gras and has a firmer texture, a beautiful pink color when raw but which turns grayish when cooked. The flavor is delicate and lingers in the mouth. Duck foie gras, on the other hand, is more tender, has a magnificent beige-orange color, and a more rustic and pronounced flavor that is immediately noticeable when tasted.
