Raw Milk Goat Cheese Rocchino
From a small family-run dairy in the heart of the Langhe, a production of great fresh goat cheeses with a delicate, slightly acidic flavor. The animals' diet is totally controlled: in winter in the barn with alfalfa hay and chopped grains, in summer in the wild pasture with wild grasses and chopped grains.
The cheese is processed with the morning's milk combined with rested milk milked the night before, kept at room temperature with the addition of calf's rennet: the result is a very fine and delicate product, with aromatic scents typical of the grasses on which the goat feeds.
