Gorgonzola is Guffanti's trademark and where it starts from & ograve; the entrepreneurial adventure of the family: in fact the founder Luigi, in 1876, bought; a silver mine abandoned in Valganna, in the province of Varese, just to begin to refine the Gorgonzola that he bought from his producer friends.
There are two variants: the most; known Gorgonzola Dolce, with a soft and creamy texture and the Gorgonzola & ldquo; Spicy & rdquo;, with a softer texture; consistent and much more; pungent on the palate, which ages for at least 90 days.

The following morning the cheesemaker mixed & ograve; the & ldquo; forgotten curd & rdquo; with the processing of the morning and so on; another great classic of the Italian dairy tradition was born: the shapes like this; obtained, since the pasta of the night before, more & ugrave; acid, did not blend perfectly with the morning dough, they were rich in folds and interstices, which during maturing favored the development of mold inside the cheese.
