Sweet Extra Dop Gorgonzola Cheese 1,5kg
Gorgonzola is the trademark of Guffanti and from where the entrepreneurial adventure of the family began: in fact, the founder Luigi, in 1876, bought an abandoned silver mine in Valganna, in the province of Varese, just to start refining the Gorgonzola which he bought from his producer friends.
There are two variants: the best known Gorgonzola Dolce, with a soft and creamy texture and the Spicy Gorgonzola with a more consistent and much more pungent texture on the palate, which ages for at least 90 days.

As often happens, even for Gorgonzola - which took on the Designation of Origin in 1955 - legend has it that it is the result of a mistake: it would seem that a cheesemaker in love to go and find his beloved, forgot a curd in the boiler for the whole night. The following morning the cheesemaker mixed the "forgotten" curd with the morning processing and thus another great classic of the Italian gastronomic tradition was born: the shapes thus obtained, since the pasta of the night before, more acidic, did not blend perfectly with the pasta in the morning, were rich in folds and interstices, which during the aging favored the development of molds inside the cheese.
