Tonka beans are the dried seeds of a typical South American fruit plant called Dipteryx odorata.

The seeds of this tropical plant are wrinkly and brown in color, very similar to the Christmas date. After being dried in the sun, Tonka beans are often used in the kitchen, but their qualities best express themselves in the pastry world.
