Toufood Isomalt
Isomalt is a product of the polyol family, meaning it is an ideal sugar substitute for low-calorie recipes. It is commonly used in preparations without added sugar, such as candies, chocolate, jams, sugar figures, and puffed caramel. Isomalt is obtained from sucrose and has a sweetening power of 0.5. It is also stable at high temperatures and caramelizes without browning, like normal sugar.
Töufood stands out for the purity of its ingredients, as it does not use added flours or maltodextrins. This simplifies all the steps of molecular cuisine with a well-calibrated and concentrated dosage. The selection of raw materials such as seaweed, vegetable cellulose, soy, potatoes, and chicory is also fundamental. Particles are extracted from these materials and, with Töufood's expertise, transformed into molecular products of excellence.
Use
Mix Isomalt with the other ingredients in the preparation or dry blend to make caramel.
