Selected Bonito del Norte tuna fillets, carefully and expertly cleaned and trimmed. In 1890, José Serrats founded the company in Bermeo, in the Basque Country community in northern Spain, inspired by the desire to preserve the exquisite flavors of the Bay of Biscay over time, first and foremost the Bonito del Norte tuna, characterized by its white and extremely delicate meat.

Helped by the exceptional quality of the fish, he implemented the most advanced techniques of the time, which immediately allowed him to successfully introduce his products in various European markets. As was the case back in the day, today, Serrats still uses only the best raw materials, selected with sustainable and traditional fishing techniques: tuna fished exclusively from June to October, when the fish are at their best to be caught and consumed.

Preserves are elaborated following a careful artisanal process, learned and perfected over five generations: this painstaking work, combined with the selection of the best raw materials – tuna and olive oil – is the reason why Serrats has been able to guarantee the quality of its products for over a century. The production facilities rely on innovative technologies that make it possible to best select, prepare and conserve the preserves. This, combined with a diligent and rigorous quality control system, is precisely what has allowed Serrats to join the Longino & Cardenal family and to endure as one of our historical brands in Italy and abroad.

“Bonito del Norte” is the Albacore tuna (Thunnus alalunga), also known as longfin tuna, found in large numbers in the Mediterranean Sea and in the warm waters of all the oceans. On the European coasts this species is rare, typically found further north near the Bay of Biscay.

The Albacore typically prefers the deeper waters away from the coast, migrating north only in the warm season during which it can be found and fished inshore. And it is precisely during this period that Serrats buys its fish when, after the long migration, the tuna renews its energy feeding on sardines, anchovies and cephalopod molluscs. Visually, Albacore is very similar to bluefin tuna: in fact the most noticeable difference lies in the pectoral fins and the larger eyes. The fish is characterized by a “barrel” shape, less slender than its larger relative, and by a dark blue color on the back and white on the sides and belly, with no dark marks.

The Albacore can reach one meter in length and 25 kg in weight (although the average size is typically about half of this) and, like almost all tuna, lives in large schools, hunting sardines, anchovies and cephalopod molluscs.
