A gastronomic experience of the highest level thanks to Hijos de José Serrat, which has been preserving fish for over a century, producing an excellent tuna in oil still exclusively by hand, as it used to be. The first step in the fish preservation process is the selection of the best and freshest fish, directly from the boats returning from the Bay of Biscay, above the Basque Country community in northern Spain. After the selection process, the fish is quickly moved to the production facility where they are double checked to make sure they meet the freshness and high quality standards expected by the company and then sorted according to their size.

The tuna fish is cleaned by hand. Afterwards, they are cooked at a temperature of 98 ºC for approximately 3 hours. After they have been set aside to cool, the fish is trimmed and the skin, bones and excess fat is removed. A second cleaning process removes all dark spots that may have remained after cooking and at this point the fillets and the “ventresca” (the part of the fish nearest the belly and the finest part of the tuna) are then separated. This cleaning phase, done completely by hand, is very important to ensure the quality of the product.

In addition to the constant monitoring, the skill and experience of Serrats’ workers allows them to remove all the inedible parts without in any way ruining the fish. The result is perfectly cleaned and intact pieces of tuna. Aspect that plays an integral role in giving Serrats’ tuna preserves their exceptional quality: white meat characterized by a savory texture, perfect and extremely delicate on the palate. Once these perfect pieces of fish have been carefully arranged in tins or glass jars, they are then covered with a specially selected olive oil. The quality of the oil is key for a superior preserve, as it attributes a soft and moist texture to the final product.

The process is concluded with one of the most important steps, the sterilization of the fish. The tins or jars are heated to a temperature between 118 ºC to 121 ºC for a length of time that depends on the size and type of packaging. The sterilization process guarantees the perfect condition of the final product, while preserving the nutritional properties of the raw materials with absolute purity.

It is extremely important to note that each tuna fish selected undergoes strict controls of quality and identification, from its origin and throughout all the various production phases. This allows Serrats to trace and identify each tin or jar of tuna, ensuring the authenticity of the product.
