Gota di Montalcino guanciale expresses all the authentic, unique and characteristic flavor of Tuscany.
It is made from the cheek and throat of the pig, the guanciale is then salted, seasoned like pancetta and aged for two months so it becomes very floverful and tasty.
The shape of this cured meat is typically triangular, the color of the meat is bright red with internal streaks of white fat.
Chef's Advice
This guanciale is ideal for lovers of intense flavors and smoky notes. It can be enjoyed plain, slicing it thinly, or as a topping for warm bruschetta, letting the guanciale warm up so that it softens.
It also lends itself well to the preparation of traditional Roman pasta dishes, such as carbonara or amatriciana.
