Whole Mazara Red Prawn
Don Gambero’s red prawns live at a depth of about 700 meters, where the strong sea currents contribute to making the meat compact. The high level of evaporation that the Mediterranean Sea undergoes in the hot season, on the other hand, enriches the shrimp with those mineral salts that give them an unmistakable flavor. Historically the symbol of an entire community – that of Mazara del Vallo, in southwestern Sicily – this product, characterized by a refined, sweet and delicate flavor, is known around the world as an Italian excellence.
Ammaru Russu, the name given to red shrimp in the Sicilian dialect, is also distinguished by its low caloric content and high iodine content: a mineral that helps maintain the proper functioning of our metabolism and regulates our energy levels. Like all Don Gambero products, as soon as they are caught, the seafood is immediately blast chilled directly on board certified fishing vessel laboratories, with a very high thermal shock. In order to maintain the full freshness of the product, the processing is carried out very quickly without rinsing and icing. The shrimp are then packaged in special trays that guarantee the structure, flavor, aroma and nutritional values of the product.

Established in 2014, Don Gambero is a dynamic fishing company based in Mazara del Vallo, which inherited a long tradition of sailors and fishermen in the temple of the Ammaru Russu, the name given to red shrimp in the Sicilian dialect.
Don Gambero does not only specialize in red shrimp available in various versions (whole, just tails and tartare), but also offers many other frozen products, selected and expertly processed: the best fish and seafood of the Aegadian Islands, Sciacca, Trapani and Mazara del Vallo.
Mediterranean Strait of Sicily
Depending on market availability, the red shrimp may be supplied from ships not flying the Italian flag but caught, nevertheless, in the Ionian Sea in the FAO 37.2.2 region and packaged in facilities located in Mazara del Vallo.
