Xeres Reserve Vinegar
Characterized by an acidity ranging from 7% to 12%, Xeres is a famous Iberian vinegar produced in Andalusia. It is obtained starting exclusively from wine, from which the acetic fermentation subsequently starts.
The vinegar is aged in wooden vats for a minimum of 6 months, with a maximum of two years for the Reserva quality.
Xeres Reserve Vinegar is characterized by a dark mahogany color, concentrated and generous. On the nose, on the other hand, a hint of wood is evident. This vinegar is ideal for the preparation of vinaigrettes and condiments, as well as to season various dishes.
The story of Longino & Cardenal started with the intuition of four young man, who shared a common passion for haute cuisine and food. The company’s activity dates back to when they first decided to import fresh caviar from Iran, to resell it to restaurants and specialized food shops.
And so a fictional name is invented: Longino, a Swiss nobleman and Cardenal, a Cuban fisherman. United by a shared passion for quality food, they decide to travel together in search of the finest specialties around the world.
